When producing our wines, we place a strong focus on preserving the unique and natural qualities provided by our cultural landscape. We want the characteristics of our soils and the climatic conditions of each and every season (the “terroir”) to be reflected in every glass poured. This is precisely why the claim “The wine is made in the vineyard” is always the guiding principle behind our winemaking activities. Measures taken to promote quality in the case of low yields and the sensible ecological cultivation of both land and vines enable us to grow healthy and high-quality grapes, which are carefully selected and hand-picked into small containers in the autumn before being rapidly and directly processed in perfect condition. Once they reach our cellar, we are committed to using gentle and traditional ageing methods to preserve this grape quality in order to achieve wines typical of each grape variety.
The wines produced on our estate stand out for a number of reasons. Our red wines, for example, are defined by the traditional mashing process used during their fermentation and the fact that we avoid using additional acids. We support the natural ageing process of our red wines by storing them in wooden barrels, just like our predecessors used to do. We are also strongly against the use of any enzymes, wood chips or similar ingredients.
